Hi there!  Let’s just not talk about the fact that it’s been several months since I last posted.  The only thing I can say is that life seemed to have gotten in the way – new house, new dogs (!), and planning a wedding.  It’s been crazy.  We are now less than nine months from the wedding, and with the new year, I have started to focus on cleaner eating.

This breakfast sandwich has been the best addition to my healthy repertoire.  I first came up with this breakfast sandwich in searching for a vegan option an Panera.  I would make the most complicated order: the egg white spinach avocado sandwich without the egg, without the cheese, on an everything bagel with black bean hummus.  It was annoying to order but soooo delicious.  This sandwich is slightly healthier with a whole wheat bagel thin.  I used everything bagel hummus here to get all of that great flavor without the calories and carbs.  This sandwich tops in at 260 calories and will keep you full all morning.  Give hummus a try for breakfast – it’s awesome!!

Hummus Avocado Breakfast Sandwich 

1 Thomas’ Whole Wheat bagel thin
1/3 of an avocado, sliced
2 tbs of your favorite hummus
1 handful of baby spinach
2 slices of tomato
a dash of Tabasco sauce (optional)

On a toasted bagel thin, spread hummus and top with avocado, spinach, and tomato slices.  Add a dash or two of Tabasco, assemble sandwich, and enjoy!
